Cheddar Cheese, Chive, Zucchini Bread (GF)

1 1/2 cups almond flour, 1/2 cup cornmeal, 1/4 cup arrowroot, 2 tsp baking powder, 1/2 tsp baking soda, pinch of salt and pepper. Mix in bowl.

In separate bowl, 1/2 Cup milk mixed with 1 Tbsp of cider vinegar (making butter milk), add 2 large eggs, 1/2 cup olive oil. Mix all ingredients together.

Fold in 1 1/2 cups grated zucchini, 1 1/2 cups grated cheddar cheese, and 1/2 chopped chives.

Bake at 350 degrees in a generously greased and floured loaf pan for 55- 60 mins.
