Delicious, Nutritious Brown Rice muffins.

1 1/4C flour ( I use sprouted spelt flour), 1/4 tsp.salt, 2 tsp. baking powder, 2 tsp. cinnamon...Mix together. Whisk 2 eggs ( can substitute flax seeds and water),with1/3 C of milk ( I used homemade almond milk), 1/3 C of maple syrup. Stir in 1 C cooked brown rice, 1/2C currants, raisons, or chopped up dates, and 3 TBsp.melted butter or coconut oil. Mix all together now! Bake at 375 degrees for 20-25 minutes. About 12 muffins. Good with almond butter or peanut butter for added protein!
